MARGAN Restaurant isn’t just at home in the Hunter Valley, it embodies everything the famous wine and food region is renowned for.

Not only can you taste their famous wines made from grapes grown on site, but the menu is designed around their 0.4-hectare kitchen garden and orchard and thus has a truly seasonal focus.

So whether it’s their freshly churned butter, changing selection of sides harvested from the garden, eggs from chickens fed with kitchen scraps or simply the filtered rainwater used on site, Margan truly draws on its position in Broke.

Winter dinner menu: Smoked, fresh and pickled garden vegetables, herb oil and buttermilk (gluten free); confit ocean trout, beetroot, apple, watercress and horseradish; butter poached chicken, spanner crab, tarragon and charred leek (gluten free); slow cooked egg, bacon consomme, maple and pistachio; roast Red Gate Farm duck breast, parfait, date and chamomile (gluten free); risotto of seasonal mushrooms, creme fraiche and rosemary (gluten free); slow-roasted blue eye trevalla, prawns, cauliflower, miso and buckwheat; local partridge, caramelised carrot, jerusalem artichoke and hazelnut (gluten free); squid ink spaghettini, red emperor, squid and preserved lemon; navarin of Milly Hill lamb, autumn vegetables and earl grey tea (gluten free); Rangers Valley Black Angus bavette, smoked onion and bone marrow (gluten free).
